Preheat oven to 400 degrees F.
Mix the sugar and margarine together until creamy, then add the flax mixture and mix well.
In a separate bowl, combine the flour, baking soda, salt, baking powder and cinnamon. Stir together, then add to the creamed mixture.
Mix well, adding in the coffee, a little at a time.
Combine the raisins, nuts, and vanilla, then fold into the batter.
Drop cookies onto a greased baking sheet. Bake for 12 to 15 minutes.
