Almost every coworker (or person) I bake for has a dislike. One dislikes peanut butter, another chocolate, one is allergic to coconut. And so on. Well, it was baking for a coworker who is so easy going and likes everything. The choices!
The girl who dislikes peanut butter was away so I opted for Peanut Butter Cookie Pie Bars. The original recipe has white chocolate peanut butter cups but I couldn’t find any vegan ones. I had planned to use the Justin’s Mini PB cups but they disappeared from the house. SO, emergency non-vegan Reece (nobody else in the dept is even vegetarian). *sigh*
So, excuse the photo with non-vegan ingredients. I know it will turn out fine with Justin’s, if they last long enough in your house. I also kind of screwed them up and they were still tasty! I forgot the baking powder and baking soda while I was messing with replacing the egg and creaming the margarine. I used egg replacer so they had a bit of those things in them, but big whoops. Still tasty though.
