So, Vegan MoFo is coming up. Remember when me blogging daily wasn’t an issue? Remember when I was excited about it all? I’ve just been busy with other non-online things to be fair, it’s not that I don’t like blogging. I’m just shifting. We’re always shifting anyway. Okay, now is not the time to get deep. So, September is Vegan Month of Food. Do I do the blog challenge? I don’t know yet.
What I do know is that I still have some friends (randomly) and I still enjoy sharing treats. So when a birthday comes around I feel like I have to bake. After I actually dirty up the kitchen a bit I do feel a bit better, especially when the treats turn out. These Oatmeal Cream Cupcakes turned out fantastic. I followed the recipe since I didn’t really think it needed much changing. Perfect as-is.
I felt they needed a little something decorative so a sprinkle of granola on top was perfect. The vegans were super stoked, the birthday boy was really darn happy and it was an all around good evening. I would have preferred to let these sit in the fridge a bit since the oatmeal cake got a bit hard on top and sometimes it just needs to mellow out in the fridge overnight. I kind of digged that part though because it was a bit firm like an oatmeal cookie and then you got the really soft cake underneath. Then again, I’m always picking apart treats I make, so it’s probably just me!
