Yeah. I know. I’m going to sit in the corner for a bit after this post, I swear. This weeks Sunday Supper is about captivating casseroles. There were some really good looking desserts in the list (you can check them out yourself) but I had a craving for rice krispie treats. You know you make those technically in a casserole dish right? I’m all about technicalities.
I can’t just say “I used Dandies as my marshmallows and margarine as my vegan substitutes” and post the darn recipe. No way. I had to bring it to another level. Did you know that oreos are accidently vegan? Woo! So crush em up and add them! That way you don’t have a sleeve serving if a box ever ends up in your pantry. They will be in the treats that you will have to arm wrestle for. I hope you’ve been going to the gym!
- 3 Tbsp margarine
- 1 package Dandies Vegan Marshmallows
- 6 cups Rice Krispies® cereal
- 2 cups coarsely chopped Oreos (chop with a knife)
- ¾ cup finely chopped Oreos (about 8 or 9, broken and whirled in a blender)
- 1 cup white vegan chocolate chips
- In large saucepan melt margarine over low heat. Add marshmallows and stir until completely melted. Remove from heat.
- Add the cereal and crushed oreos. Stir until well coated.
- Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Melt chocolate chips and cover the top of the bars. While the chocolate is still warm sprinkle the finely chopped oreos over the top.
- Cool. Cut into 2-inch squares. Inhale.
