I got some cranberries in my CSA and I forgot to use them around Thanksgiving. Oh well. Baking with cranberries is pretty fun, so I whipped up this Vegan Cranberry Lemon Quick Bread.
I didn’t have any lemonade so I just used some lemon extract and water. Hrm. It tastes fine but I think it needs the sugar from the lemonade. Oh well. I have to say the coolest part of the recipe was mixing the applesauce and baking powder. It fuzzes up and looks eggy. Kind of cool!
