It’s much better for my waistline if I actually cook but things have been so hectic the thought of dinner almost brings me to tears. I needed an easy and comforting recipe this week so I chose Vegan Chili Mac. Now, let it be said, this is not my version of chili mac.
This is a healthy pasta dish that shares the chili mac name. Which is fine. I thought it was super tasty to be honest, and quite comforting. This recipe makes a ton but it reheats well. I’m honestly going to be eating this for days so next time a half batch is way better for two of us.
