I had to make a last minute treat for a coworker who doesn’t really like chocolate. Yes, the rest of them got chocolate (recipe to come) but for her I thought a quick batch of cookie would do. These Soft Gingersnaps fit the bill.
I didn’t have to do a gluten-free recipe but hey, why not? These were tasty and the husband thought they were great with coffee. I guess my almond flour wasn’t as fine as the original recipe but the texture was nice, not weird or gritty. No changes to the recipe and it worked out well.
