Tis the season for gingerbread things. I came across this recipe for Gingerbread Lemon Buns and it was such a nice roll variant. I have to say I’m pretty stuck on plain cinnamon rolls but hey, I do love molasses and gingerbread.
The recipe is pretty straight forward. My dough was really tough though, it could have been the temperature drop in my kitchen though. I opted to just power through (with my mixer) instead of trying to hydrate it more and it was okay at the end. I didn’t add enough filling it seems because it absorbed mostly into the buns instead of leaving a sticky yummy mess (of course I didn’t measure) so I added a lemon drizzle on top. So fantastic warm by the way. Yum.
