vegan baklava wafflesIt’s cold and damp and I needed waffles. Okay, I eat waffles almost every weekend, in case you couldn’t tell by all of my posts. Baklava came up at home (“why don’t you make me baklava anymore?”).

I only had walnuts, and that was totally fine. I used agave instead of honey and I doubt it made much difference. I had my waffle maker on high so they got a bit too crispy (if they can be too crispy at our house) but still really tasty.

Vegan Baklava Waffles
 
Ingredients
  • 1 cup flour (spelt or plain flour)
  • 1 cup water
  • 2 tbsp coconut oil
  • pinch of salt
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • 2 tbsp maple syrup
  • 1 tsp vanilla
For syrup
  • 3 tbsp water
  • ¼ cup golden caster sugar
  • 1 tsp agave nectar
  • 1 tsp orange blossom water (you can add rose water to if you have it)
  • pinch of cinnamon
Instructions
  1. Add all of the ingredients in a bowl together and stir together into a batter heat the waffle iron and grease well with more coconut oil or canola oil pour in the batter and cook for 4 minutes
  2. Add the water sugar and agave in a pan and stir to combine, then add the orange blossom water and cinnamon, bring to the boil and let thicken to a syrup
  3. Pour over waffles and sprinkle on some chopped pistachios and walnuts.
