I wasn’t going to bake a pumpkin pie this year. Too much hassle. There was sure to be pie at our friends house. Blah blah blah. But on Tuesday all that I was craving was damn pumpkin pie. I blame the bloggers. Ruffles and Truffles especially. This recipe for Tofu Pumpkin Pie had some basic ingredients and I had everything at home. No mad rush to the grocery store to beat the crowds.
Of course the slice I choose has a tiny bit of unmixed pumpkin in it. Go figure. I was to busy trying to shove this in my mouth to be honest. Nothing like pie for breakfast. The recipe was easy, nice and sweet and was totally perfect for my cravings. I’m at work today but at least I’m not alone, and I have pie for breakfast (and dinner if I want!).
