I wasn’t going to bake a pumpkin pie this year. Too much hassle. There was sure to be pie at our friends house. Blah blah blah. But on Tuesday all that I was craving was damn pumpkin pie. I blame the bloggers. Ruffles and Truffles especially. This recipe for Tofu Pumpkin Pie had some basic ingredients and I had everything at home. No mad rush to the grocery store to beat the crowds.
Of course the slice I choose has a tiny bit of unmixed pumpkin in it. Go figure. I was to busy trying to shove this in my mouth to be honest. Nothing like pie for breakfast. Â The recipe was easy, nice and sweet and was totally perfect for my cravings. I’m at work today but at least I’m not alone, and I have pie for breakfast (and dinner if I want!).
