It’s raining! We’re so excited here in California for this rain, and today it’s a nice big storm. Everyone is starting to bake for the holidays so I had cookies on the brain (I really should start thinking about what cookies I’m baking for my cookie swap next Sunday, hrm), so I whipped up some Old Fashioned Soft Molasses Cookies in the shape of umbrellas.
The recipe says to serve them with margarine, I guess kind of like how my grandma would serve Scottish scones, but that’s not my jam. I think I’ll dig out some leftover frosting 😉

I haven’t made molasses cookies in so long, and I’ve never tried the flax egg trick. One plus of the vegan recipe is that you could eat the raw dough without worrying about egg safety.
