Cup. Cakes. Aw yeah. Another work birthday, another set of cupcakes. I set out to make this Lemon Raspberry Cake but I got super lazy and made them cupcakes. To be honest, the cake would have been quicker but I didn’t think of that at the time. I had to cut each cupcake open, put in some jam and then top them with frosting. There’s even some raspberry sugar on top!
I really love chocolate and raspberries but vanilla works just as well. These were so easy to make cute and dainty, easy presentation. Oh, and they went like hotcakes. The cake was a great texture and everything just worked out so well. Another tried and true recipe for sure.
