I wanted to try a different recipe so I tried this one from Once Upon A Cutting Board. The crust intrigued me. The crust was tasty but there’s a reason why I have no “cut” photos. I left it out overnight and when I took a piece it was a crumbly mess. No worries. I popped it in the fridge for the second slice. And it stuck and was a crumbly mess. The coconut oil was just not enough binder for my crust.
The filling was tasty though. As you can see it didn’t level itself or anything, just baked up golden. That’s okay though. I just wish this was a sharing pie but it’s best eaten directly out of the pie plate.
