I really don’t mean to be so lazy with my recipe choices but I’ve found that baking every day for a post the next day is getting to me. Hopefully today or tomorrow I’ll have a bit of time to bake. This recipe for Coconut Oil Shortbread is so easy, I made it even easier. Go figure.
The ingredients are so simple. Instead of putting them in the fridge in a log though I decided to press them into my mini tart forms. I didn’t realize I should have done a better pressing job but hey, it was easy. The coconut oil flavour is really nice and these are a great shortbread cookie. Today after tennis I hope I have some energy to do something. The weather is nice and I want to get out of the house.
