Yep, I got to the store, don’t worry about that. I do dig gluten-free cookies but I really wanted to make these Vegan Peanut Butter Cream Cheese Cookies from Namely Marley. I’m pretty impressed I held out until day 4 for peanut butter.
Me and peanut butter are the best of friends. It’s a great protein source and I eat a LOT of peanut butter. I did feel guilty about it for awhile, kind of shamed into trying other nut butters. The husband found out he really likes sun butter (sunflower seeds) and almond is okay but since I found out I have a slight almond allergy I don’t eat it as much as I used to. Cashews are okay as well but my favourite will always be peanut butter.
It’s homey and so is this recipe. The vegan cream cheese makes them soft as pillows. The cornstarch gives them a great texture and the are really a soft comfort cookie. Hey, it’s Thursday so everyone could use some cookies.
