Home stretch! Today is the second last day and I’ll hit my 30 days of cookies! I’m pretty proud I kept up with this, it was honestly tough to blog each day. I go through spurts of cleaning out my pantry. I found some vegan butterscotch chips and started looking for a good way to use them. Since I’m at the last few days of MoFo I didn’t have to make cookies but I found this recipe for Rooibos Oatmeal Butterscotch Chip Cookies and thought it sounded pretty interesting. I love tea, butterscotch and well, I had to make some sort of cookies yesterday for today’s post, so it worked.
This recipe makes a HUGE batch, I mean, 4 eggs. I already knew I was going to quarter the recipe. I used flax seeds as my egg replacer since the texture wouldn’t be too noticeable with the oatmeal. I think mine didn’t turn out so brown because I used margarine instead of butter. Hrm. Since I quartered the recipe I did make the full rooibos infusion but just used half. I still didn’t really taste the tea which was kind of a bummer.
