I’m getting ready for the Ice Cream Crawl and writing a blog post. I’m going to be skipping tennis since I need to be in Berkeley by 11am. Woop! I can’t wait! We always go to places that have a few dairy-free options so lots of sugar for me today. But I also had to make cookies for today!
Bunnies! Since I was going through my cookie cutters I pulled out my bunny and was on the hunt for a recipe. I haven’t made anything lemon in a bit so I settled on this recipe for Vegan and Gluten Free Lemon Poppy Seed Cookies. I think this recipe needs a different flour blend. I used Bob’s Red Mill and the texture was just a bit off. They suffered from that weird mouthfeel. Meh. Still, they were at least lemony and fun to bake!
