Fall is here… for most people. A favourite fall memory for me is getting out of bed with a chill still in the air and walking downstairs to the kitchen. There, my mom (who I’m not sure slept) would be in the kitchen hovering over a cup of coffee. I would look at the pot to judge if interaction was possible. The emptier the pot the more I could say in the early morning. If it was her first cup we were to pretend she didn’t exist.
In the early am in the fall though the house would be a bit chilly, not cool enough for heat but not warm enough to keep the steam from drifting off of my moms mug. This SundaySupper is all about fabulous fall food. There’s so many to choose from but since I’m making cookies all this month and had coffee on the mind I decided to whip up some Southern Coffee Cookies for the coffee lover in my life. These are dunkers, don’t be shy!

Southern Coffee Cookies
Ingredients
- 1 cup sugar
- 1/2 cup margarine
- 1Â Tbsp flax seeds mixed with 3 Tbsp water
- 2 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 cup cold coffee
- 1/2 cup raisins chopped
- 1/2 cup walnuts or pecans chopped
- 1 teaspoon vanilla
Instructions
- Preheat oven to 400 degrees F.
- Mix the sugar and margarine together until creamy, then add the flax mixture and mix well.
- In a separate bowl, combine the flour, baking soda, salt, baking powder and cinnamon. Stir together, then add to the creamed mixture.
- Mix well, adding in the coffee, a little at a time.
- Combine the raisins, nuts, and vanilla, then fold into the batter.
- Drop cookies onto a greased baking sheet. Bake for 12 to 15 minutes.

I have never heard of coffee cookies, but they sound very tasty. I am already missing summer, but there is something to be said about these fall days where the windows can be open and it’s just a little too chilly in the house.
