There’s nothing like baking for others. I mean, it’s all fine and dandy when I get a craving but I love to bake to celebrate. We recently got a new member of our team at work (transferred from another department) and I felt like celebrating! Convenient I had cookies to bake and they would fit in my backpack on my motorcycle.
There’s going to be a lot of chocolate on the blog this month, it’s just popular in cookies and darn tasty. I’ll try to branch out, I promise, but before that here’s some Vegan Chocolate Almond Cookies. I feel like with this paper they are chocolatey and mysterious. With moustaches! Okay, I digress.
I’ve made a few recipes from Two Peas & Their Pod and this one was great. I didn’t make any substitutions! I’m kind of avoiding almonds since I do have a slight allergy but the husband and coworkers thought they were fantastic. I used half raw and half roasted/salted nuts and omitted the added salt. Turned out perfect. Oh, did I mention that the girl who I baked for took a vacation day? So everyone else enjoyed her cookies. You snooze (or vacation), you lose!
