Another Friday, another breakfast cookie. Yeah, you’d think I’d plan and make these on a Monday or something but I don’t have that sort of brilliant foresight. Oh well. Plus, last week I had a breakfast cookie before tennis and it worked out great for my energy levels. That, and we didn’t really run much since we worked on serves and volleys. I’m gonna +1 the cookie though. And I appreciate the eating cookies for breakfast thing, I’m starting to get a collection on my counter.
As I said I’m kind of over my jumbo raisins and was glad that Greg’s recipe called for golden raisins. His recipe isn’t vegan but nothing that margarine and an egg replacer can’t take care of! These were fantastic. Nice and chewy and I even liked the walnuts. Can’t wait to see if they are my lucky energy cookie tomorrow for tennis!
