This is technically a salad but I just like to call it a side. Why have boring potatoes when you can have awesome dill and grilled corn side. If I need a tried and true recipe I always turn to the Fat Free Vegan site.
This was easy enough, I had some leftover corn from grilling and I took it off the cob before storing so it whipped together easily. It’s quite tangy which I like and I’m really glad I used the dill. I missed out on the green onions but I generally don’t keep them in the fridge and I forgot when I was shopping for the dill. It was all good though, the husband gave it thumbs up and we kind of ate too much because it was a bit addicting. Oops!
