As you know I’ve complained about not having air conditioning a lot. I signed up right away when I heard this #SundaySupper theme was Summer Chillin’. It was quite warm in my house yesterday so I was pretty excited to not have to turn on my oven to do a post! I honestly can’t wait to go through the other recipes, I’m dreading turning on my oven this weekend and I might be bbq’d out!
Never heard of penuche? It’s a very basic fudge. Just milk, sugar and butter. All things I veganize every day! So this recipe takes the penuche flavour and binds it to oats and nuts. I used walnuts. You can blitz some of the oat in the food processor if you are worried about the cookies sticking together, but either way is fine just as long as you cook the mixture enough.

No-bake Penuche Drop Cookies
Ingredients
- 1/2 cup margarine
- 2 cups light brown sugar
- 1/2 cup almond milk
- 1 teaspoon vanilla extract
- 3 cups quick oats uncooked
- 3/4 cup chopped nuts
Instructions
- Combine nuts and oats in a bowl and set aside.
- Combine brown sugar, margarine, and almond milk in a saucepan and bring to a boil.
- Boil 2 minutes (start timing once the boil starts). Add vanilla extract.
- Pour over nuts and oats. Mix.Drop by teaspoonsful onto wax paper. Cool.
