After the carrot cake muffins last week I still had carrot cake on my mind. The reason why I didn’t make this Heavenly Carrot Cake Baked Oatmeal earlier is because I tend to buy baby carrots and they are a bitch to shred. It’s not like I haven’t done it before but I’m lazy. Having full carrots in the fridge makes these sort of recipes so much easier.
I wasn’t planning on making a full recipe but I’m pretty glad I did. I didn’t really measure the maple syrup or anything and it turned out great even though I completely forgot about it in the oven so it is way overcooked. A bit dry but still darn tasty.
