I have an excess of strawberries. I’m not getting through them quickly so I was looking for some different recipes. I found this Strawberry Pudding recipe over at Food.com and though I would give it a go. It’s darn tasty and as easy as making jam. I had some issues with the cornstarch clumping a bit while cooking (not while putting it in) so I blended it a tiny bit and all was forgiven. It’s not “pudding” like but it was tasty. When I think of pudding I think of creamy but it’s not a huge deal.
