Is it fangirl status when you make two separate cake recipes from the same blog in a week? It looks like it huh? I actually wanted to make this Easy Banana Cake with Peanut Butter Frosting before the Cherry Almond Cake, it just didn’t work out that way. I was going to make this for friends but they were weirded out by the peanut butter and banana combo. As a North American I find this baffling. I LOVE peanut butter and bananas so I made a smaller cake just to share with the husband.
This one required a lot of subs but it worked out well for the cake. Mostly because the banana was the star of the show, until I covered it with peanut butter frosting, which kicked some major butt. Anyway, for the cake I used margarine, egg replacer, and coconut milk yogurt. The frosting got a dash of almond milk. I did make a smaller cake but I kept the frosting the same amount because I knew it was going to rock. Totally worth it. So good and even though I didn’t bother to make it all pretty the taste made up for it.
