This rarely happens. Very very rarely. I have to admit I generally have a cache of things I baked on the weekend or a week or so ago and then I work on the blog post and publish whenever I feel like it. Lots of drafts in my blogging folder. Except… I’m out of drafts. I haven’t been baking that much since it’s been hot or I haven’t been in the mood. This is pretty darn close to real-time blogging. And here’s another record: I saw this post for Chunky Monkey Vegan Banana Bread as part of the #SundaySupper get together and I made it 2 hours later.
I left the bread to cool to go see a movie (How To Train Your Dragon 2, it was cute) and then had to rush home while there was still light to take a few photos. Editing and writing the blog before Game of Thrones and then to set it to publish Tuesday (today)! That’s a darn quick turn around for me! I could have published yesterday but I wanted to talk about motorcycles 😉
I did a few substitutions. First of all I used all-purpose flour instead of rice flour. The original looked great but I wanted a lighter loaf so I doubled the baking powder and put it all in the same pan instead of making two loaves. I thought it would take a lot longer to bake but it came in at around 45 minutes I think, I was surprised. It turned out fantastic and it’s so tasty. Now, to share it because I probably shouldn’t eat a loaf myself.
