The husband LOVES PayDay bars. So when I saw this recipe over at The Miniature Moose I couldn’t resist. Plus, you know, it says “healthy” in the title. I could use some healthy in my life right now. It was pretty easy and straight forward. My bars are kind of messy though and they wouldn’t really hold together. Not an issue but hard for presentation. I think I just didn’t press enough nuts into the filling, but I was impatient. The filling was date filled and sticky which is awesome. I used the Trader Joe’s 50% less salted peanuts which worked perfectly.
