Carrot Cake is always a favourite so when I found this recipe for Vegan, Gluten-Free Travel+ Carrot Cake Oatmeal Bars and decided to give it a go.
I cut these a bit warm and they didn’t want to stick together. Then they just didn’t want to stick together when cool. So weird. You’d think the chia would keep them together.
Anyway, they are fine wrapped in cling wrap and in the fridge. Kind of taste like raw carrot cake. I think next time I’d chop the nuts a bit more fine, they kind of stood out a bit, that could have helped with keeping them together too.
