Chocolate & Peanut Butter SquaresYes, in case you haven’t noticed my default flavour profile is chocolate and peanut butter. I can’t help it. I’m an addict, and this week’s #SundaySupper is 5 ingredients or less. What can you do with only 5 ingredients? Well, if you are craving chocolate and peanut butter you can make some easy, no bake, peanut butter bars covered in chocolate.

Chocolate & Peanut Butter Squares-2Basically these are a vegan  buckeye, or peanut butter ball without the hassle of rolling them into a ball and then dipping them. Do you know how long it takes to do that part? That’s why I only do it once a year around Christmas. This is so quick. They only have to hang out in the fridge for about a half hour until you can cut them into squares! So maybe it takes about 35 minutes total to make these babies. I made them all fancy with crunchy peanut butter but you can use any nut butter you want, just make sure it is your favourite!

Ingredients

  • 1 1/2 Cups graham cracker crumbs
  • 1 lb confectioners' sugar (3 to 3 1/2 cups)
  • 1 1/2 Cups peanut butter
  • 1 Cup margarine, melted
  • 1 (12 ounce) bag vegan chocolate chips

Instructions

  1. Combine graham crumbs, sugar and peanut butter and mix well.
  2. Blend in melted butter until well combined.
  3. Press mixture evenly into a 9 x 13 inch pan.
  4. Melt chocolate chips in microwave or in double boiler.
  5. Spread over peanut butter mixture.
  6. Chill until just set and cut into bars (these are very hard to cut if the chocolate gets "rock hard".
