These are the muffins I have been eating for breakfast. They are a cool Carrot Cake Muffin recipe from Lormier Street Kitchen.
I was pleasantly surprised with the recipe to be honest. There is only agave nectar, no granulated sugar but you also have to remember they have raisins in them as well. They were quite moist and lasted a few days without going soggy like some other fruit filled muffins. As I mentioned before I had them for breakfast and it was a nice change, that’s usually my husbands M.O. for breakfast treats, I’m more of a bagel girl.
