Happy birthday #SundaySupper! I’d like to have you all over for tea! I think I figured out a perfect gluten-free tea cookie. Why do I think they are the perfect tea cookie? Because for once I made something that doesn’t slam your tastebuds and take names later. I even made them petite! So if you want a nice mellow cookie that happens to be gluten-free, this is your cookie.
They are far from bland though, don’t worry. They just aren’t saturated in flavours that can take away from other foods or tea. I made them small and they were kind of crispy. We had them at a picnic at the park and while they didn’t stand out they also didn’t stand a chance on the blanket and got inhaled. We had beers, wine, mixed drinks and other beverages and people were all impressed that they didn’t punk out their tastebuds.

Gluten-Free Vegan Coconut Cookies
Ingredients
- 1/4 cup cornstarch
- 1/4 cup sugar
- 3/4 cup rice flour
- 1/2 cup margarine
- 3/4 cup shredded unsweetened coconut
- 1/2 teaspoon vanilla or orange extract optional
Instructions
- Sift together the corn starch and flour in one bowl.
- Mix the margarine and sugar until fluffy in another bowl.
- Add vanilla or orange extract, if using, to the margarine mixture.
- Add flour mixture to margarine mixture and mix until combined. Add the coconut and mix.
- Using a tablespoon measure, spoon onto a very lightly greased cookie sheet. Press down lightly, they probably won't spread.
- Bake at 350ºF for about 20 minutes until golden brown on the edges.
