Farmers Market Finds: Parsnips

parsnipsYep, my farmers market is 12 months a year. Thank you California. So we’re on to root vegetables. Things I grew up with but never liked. Barely tried but once you’ve had one mashed parsnip you’ve pretty much written them all off. Why was my family into only serving mashed root vegetables? Freaking Irish.

Anyway, parsnips. They are high in potassium which is great! We always had them with a Sunday roast but as I said… mashed. Meh. I’m all about roasting them now. They make a nice different side to potatoes and are a bit more sweet.
