This weeks theme is reflections and resolutions. Most people are gearing up for their resolutions or just so very tired of the holiday. I don’t make new years resolutions to be honest. However, I do love chocolate at any time of the year. If I had to make a resolution it would be “keep it simple”.
Instead of spending a lot of time coming up with a fancy recipe I decided to make a very quick and easy one so that I can maximize my time on the couch with my video games when I’m not working (which has been like 2 days, woo). Peanut and Pretzel bark is so very easy and I always have the ingredients on hand because I live with a pretzel fiend. Of course you can switch up the nuts but I love peanuts and pretzels together.
Peanut and Pretzel Bark
- 12 ounces semi-sweet chocolate
- 3 ounces dry roasted peanuts chopped
- 3 ounces pretzels chopped
- While the chocolate is melting, cover a baking sheet with parchment, waxed paper or a silpat liner. Stir the peanuts and pretzels into the melted chocolate. Quickly spread into paper-lined cookie sheet. Harden in the refrigerator. Break into pieces and store in an airtight container.
