So this weeks Sunday Supper is a hard theme. Holiday music/movie/tv inspired. Well, I don’t really like holiday music or movies much. It was a toss-up between Die Hard and Gremlins. And well, Gremlins are little gluttons so I went there. But at least Mogwais are cute! They originally ate chicken after midnight but I wasn’t in the mood for a savoury meal. I needed chocolate. I wanted little bombs of chocolate be precise. And someone on my Tumblr feed had been baking with nutella so I was in the mood for that as well. Gremlins would inhale these suckers. The hazelnuts are awesome but I did a bit of a cheat with the frosting just using hazelnut flavouring. Sometimes you want vegan nutella but don’t want to make it. It turned out great on the cookies so I’m glad I did it and it was much faster than making my own spread. My cookies didn’t spread much but yours might. Depends on your margarine, I generally don’t get a lot of spread in my oven anyway. I like them puffy.
Hazelnut Chocolate Chip Cookies
- 1/2 cup room temperature margarine
- 3/4 cups brown sugar
- 1 Tbsp ground flax seed
- 3 Tbsp soy creamer
- 1 tsp vanilla
- 1 tsp hazelnut flavouring
- 2 cups all purpose flour
- 1 tsp baking powder
- 2/3 cup finely chopped hazelnuts
- 1/2 cup chocolate chips
- 3/4 cup chocolate chips
- 1/3 cup soy creamer
- 1/4 tsp hazelnut flavouring
- Chopped hazelnuts optional
- Preheat the oven to heat the oven to 350ºF.
- In a mixing bowl cream the margarine and sugar until light and fluffy.
- Add the flax and soy creamer and mix until combined, scraping the sides of the bowl with a spatula. Add the vanilla and hazelnut flavouring.
- Stir in the flour, baking powder, and hazelnuts and stir to combine.
- With a spatula fold in the chocolate chips.
- Using a medium cookie dough scoop, place spoonfuls of cookie dough on baking sheets.
- Bake the cookies for 10-12 minutes or until golden brown.
- Remove the cookies from the oven, leave for 5 minutes on the baking sheet before cooling them completely on wire racks.
- To make the chocolate ganache, place the chocolate chips and creamer in a heatproof bowl and microwave until melted, stirring to combine. Add the hazelnut flavouring.
- With a teaspoon, frost the cookies with a little bit of the ganache and sprinkle some chopped hazelnuts on top if you'd like.
