What’s a girl to do when she has pre-bought vegan butterscotch chips? Make cookies. Duh. I needed cookies, stat. I didn’t want chocolate so I pulled out the butterscotch chips and made these Brown Sugar Toffee Cookies.
I knew these were going to be good because they had brown sugar in the name. That means I was expecting (and got) a soft cookie. I used margarine and almond milk instead of the yogurt. It worked out quite well. They turned a beautiful golden brown and hit the spot.
