I’m not sure I can resist making a streusel muffin. Seriously. They always go so quickly around here. When these came out of the oven I had to wait patiently to take a photo. I offered the photo muffin to the husband and he came back with “can I have two?”. Yep, he already knew he didn’t want to walk back to the kitchen for another.
The Apple Cinnamon Banana-Nut Muffins recipe is from Peas & Crayons. It was pretty easy to veganize. Agave nectar for the honey, egg replacer for the eggs and almond milk for the yogurt. Margarine for the butter in the streusel. Now, I should have actually read the recipe. I blame making these right when I got up in the morning. I totally missed the part where you are supposed to cook the banana and apple. And the part where you are supposed to be careful with the dry ingredients. Instead I dumped wet into dry and called it a day. And it still turned out. The whole wheat flour gave the muffins a bit more texture, keeping them from being too light for the streusel. The streusel was fab itself, should have doubled it 😉
