This weeks Sunday Supper is all about 1 pot. To me this means something easy. An easy dessert? Pudding. I definitely go through pudding phases. Instead of trying yet another pudding recipe I decided to make my own.  I wanted something rich and full of flavour and that’s exactly what this recipe gets right down to!
Chocolate and peanut butter. In case you want a nice smooth pudding I opted for creamy peanut butter in the recipe but for a bit of crunch on top you can add whole peanuts. The salted peanuts go great with the sweet rich pudding. It’s so easy too, a saucepan and a little whisking are all that is required. I used almond milk but it would work great with other non-dairy milks like hazelnut, soy or even coconut.

Vegan Chocolate-Peanut Butter Pudding Recipe
Ingredients
- 1/3 cup granulated sugar
- 2 tablespoons cornstarch
- 2 tablespoons Dutch process cocoa
- 2 cups non dairy milk
- 1/4 cup dark chocolate finely chopped
- 1/4 cup creamy peanut butter
- 1 tablespoon chopped unsalted dry-roasted peanuts
Instructions
- Combine sugar, cornstarch, and cocoa in a medium saucepan; stir with a whisk. Whisk in the non-dairy milk.
- Bring to a boil over medium-high heat. Cook 1 minute or until thick and bubbly.
- Remove from heat. Add chocolate and peanut butter, stirring until smooth.
- Spoon about 1/3 cup pudding into each bowl. Top each serving with peanuts.

It probably would. I do love silken tofu pudding recipes but I use this one for when I don’t have it in the house. I’d add a bit more chocolate though since it might not be as rich with the tofu.
