Well, I had 1/2 of a tetra pack of silken tofu to use up. I didn’t want pudding and I just wasn’t sure what to make. I found a recipe over on the Nasoya site for Peanut Butter Cookies. I thought I would give it a go.
I halved everything but the tofu. It didn’t seem like a big deal. I guess it wasn’t in retrospect because they turned out okay but nothing like the photo on their site. They didn’t spread at all, so I got really big fat soft cookies. Also, I didn’t think they were sweet enough, but it made them great for waking up in the morning with tea. Not a total sugar buzz. I really like how the tofu kept them quite soft, but I think I’d add brown sugar to the next batch.
