I could have made a Shepherd’s Pie with fake meat but I knew that veggies would have been fine and I didn’t need the extra oomph. This casserole has enough of its own oomph. I found this McDougall recipe years ago and decided to actually take a few photos when I made it this time around.
Oil free and full of veggies make this guilt-free. You can use so many different veggies in this casserole. I didn’t add the cabbage or green beans this time since I was running out of room in my dish. It makes its own gravy and some of it bubbled to the top. So tasty.
