This one goes out to the one I love… okay, I’ll stop while I’m ahead. The husband loves maple pecan so I whipped some up. While I used regular pecans for the base (you grind them up, thank goodness I have a blendtec), I used candied pecans as the mix-in.
It’s from Vegan A La Mode and it’s a pretty good recipe. It was a very thick base and it froze well. The candied pecans were a good idea since I didn’t find the base too sweet at all. The ground up pecans really mellowed out the sugar flavour but added to the nuttiness. If I make this again I might add some brown sugar just to make it a tad more sweet.
