I had pie on the brain. Yesterday pumpkin, today apple pie! Well, to be honest the husband said I should make an apple pie ice cream. So I used my Google-fu and found a recipe over at Quiche A Week.
I’m going to be honest here, I had doubts. What if the apples are still crunchy? What if there isn’t enough sugar? Well, I nixed the Truvia right away. I halved the recipe in case it sucked and I used a quarter cup of brown sugar. And when I tasted the base I immediately regretted only making half.
The husband loved it so much he had it for breakfast. This one will go on the “make again” list for sure. I’m glad I added the brown sugar, I don’t think the Truvia would have been enough honestly unless you do add sweet toppings.
Well, I know the next ice cream I’m making to fit my theme! Funny, I was just thinking about an apple pie ice cream, too. 🙂
