I wonder how many readers I’m losing by doing a pure month of ice cream. Is it getting dull? Do you hate me because I haven’t been sharing? Hmm. I wanted chocolate ice cream but something a little bit different. This Chocolate Mousse Ice Cream from Lick It! seemed like a good idea. Why? Tofu. Yep. I went there. Tofu in my ice cream. And booze.
To vegans this isn’t scary. Tofu isn’t evil, it’s just a means to an end. Savoury and sweet. In this case the tofu is what makes things light yet rich. The recipe called for alcohol, amaretto to be precise. I didn’t have any but I had a feeling that the alcohol played a big role in this one, keeping it from being rock solid after it was frozen. I added a splash or two of vodka and while you don’t taste it, it really helped the texture. If you are making a pure chocolate recipe like this don’t use the crummy chocolate chips. Seriously. Be a snob. I went half way and used 82% Guittard Bittersweet chocolate (local, yay!). It made the ice cream so much more decadent and wonderful.
