I’m pretty excited about my new coworkers. They are all pretty nice and eat my baked goods. This is handy for when I want to make a cake! I had bookmarked this Oatmeal Chocolate Chip Cake With Cream Cheese Frosting and thought it would be easy enough to veganize. It was and the result was pretty nice.
I left out the brandy because I didn’t have any. I eyed the whiskey but just opted to make the cake without and it turned out fine. I used a flax seeds and water as an egg replacer and margarine for the cake. As per usual I used Tofutti cream cheese for the frosting. It turned out great. I like how it can all be made and iced in the pan. Instead of bringing the whole pan to work I made little servings which are always fun in meetings. Meetings are always better with cake.
Oh, man. I was looking for an oatmeal cake a couple weeks ago for some reason. Now I have one! 🙂
Since you skipped the bourbon, did you just flour the chocolate chips?
Yep, I just floured them and they didn’t really sink a lot.
