I make a lot of waffles. I was excited when the #SundaySupper crew came up with a theme of breakfast for dinner since I eat waffles all the time. That’s the thing: they reheat well (I use the toaster since I like them extra crispy) and are so darn portable. To make my waffles I don’t have anything fancy: I use my George Foreman, or Mr. Foreman as he’s known around here. I got the one with interchangeable plates and I love it. Grill something one day, griddle plate another day and then there’s the pancake plates. I use them the most often. I rarely fill them full, I like smaller waffles, that way you get more!
This is a basic recipe that uses a buttermilk alternative that is popular in vegan baking: apple cider vinegar and non-dairy milk. It curdles the milk a bit and helps with that sourness that is in a real buttermilk. You can opt to use other flours but I would do a 50/50 mix at first. 100% whole wheat would be too much, and same with even whole wheat pastry flour. Top them with whatever you want. Your call. My standby is just plain maple syrup. Can’t be beat honestly.

Basic Vegan Waffles Recipe
Ingredients
- 2 Cups Non Dairy Milk I used Almond Milk
- 1 tsp Apple Cider Vinegar
- 3 Tbsp Canola Oil
- 2 Tbsp Maple Syrup
- 2 Cups All Purpose Flour
- 1/2 tsp Salt
- 1 Tbsp Baking Powder
- 1 Tbsp Cornstarch
Instructions
- Add the apple cider vinegar to the non dairy milk and let sit about 5 minutes.
- In a large bowl add the wet ingredients one by one and mix it thoroughly with a whisk.
- Add the dry ingredients and mix it until the batter is smooth. It should have the consistency of pancake batter; neither too thick nor too thin.
- Spray the waffle iron with cooking spray and make waffles according to the instructions that comes with your waffle iron.

I could eat waffles at any time of day too. I love making a giant batch, keeping them the fridge or freezer and throwing them into the toaster. Yum! These look great. I love that you posted a vegan alternative to the regular waffle recipes.

That’s exactly what I do! I love them extra crispy from the toaster, I tend to just hold them in my hand to eat them. My favourite way.

These were awesome! I subbed in molasses for the maple syrup, and did one part white flour to two parts rye flour, creating an almost gingerbready flavour. I will definitely be using this as a base for other experiments!
