I was kind of at a loss on what to do with my kumquats. Something different. I wasn’t up to making marmalade or something long cooked. Way too much work. And honestly these were a bit bitter so popping them by themselves wasn’t much fun.
I found a recipe for Kumquat Poppy Seed Scones and thought it was a great idea. I rarely make citrus scones so it was a darn good excuse. I didn’t make them gluten-free since I was feeding only myself and my husband. Honestly, I should have because I worked the dough a bit too much and they were not as tender as they should have been. Oh well. They were still tasty and paired well with the agave nectar.
