Kumquats are strange little citrus. They are backwards for us North Americans. Kind of like the myth the toilet flush swirls in the other direction in Australia. The fruit itself is kind of bitter and tart and the rind is sweet.
We honestly don’t get many around here since oranges and citrus are so very easy to grow. You get a sweet outside bite and a sour finish from the inside. I’ve really seen them the most in preserves and marmalade but I wasn’t up for making a big endeavor like that this week. Stay tuned tomorrow to see how they made it into my kitchen!
