Nothing cheers me up like chocolate and peanut butter. When I was reading the post about Romesco sauce over at Elise’s blog, she made this granola as well. I feel like a groupie but damn this granola is awesome.
I’m going to be upfront with you. There is nothing close to healthy about this granola in my book. It is high calorie, lots of sugar (even though it’s maple syrup) and it’s fantastic. Mine turned out a bit soft, so if you like it super crunchy you might need to bake it a bit longer and have a thinner layer of granola since the peanut butter kept mine from being super crunchy. Does it matter? Hell no. I lost the coconut in the flavour mix, next time I might just add slivered almonds. Break it into big pieces for snacking granola. The crumbs are great in yogurt or with almond milk. I kept on picking at it taking the photos hence no other shots.
This looks so good! I am having killer chocolate cravings today, and I think that might just be the thing that would fix it without giving me too much of a sugar rush.
This will work. The peanut butter makes it nice and rich tasting. I was happy to eat the whole batch!
