Goodness, I’ve had this post about Chewy Banana Coconut Granola Bars bookmarked since last June! It goes to show you I really don’t get around to making all of the things I want to try that I find. There are some things I have to try asap but most of the time they go into a queue until a craving hits.
These reminded me of my breakfast bars, very easy. I opted to leave out the oil and use almonds. Perfect for quick snacks and even breakfast. I probably wouldn’t feed them to my gluten-free friends mostly because I know a few of them are sensitive to oats — even the gluten-free kind. Be sure to ask your friends if you are making them for someone else, it’s best to be sure.
