Another lame loaf. Oi. While this Pumpernickel bread tasted fine, it looked like crap and the yeast really hated me. Or it hated the pumpernickel flour.
I mean, my breadcrumbs just hung out and didn’t absorb into the bread. So weird. Who knows. Honestly, this book has been rough on my bread baking ego. Maybe my ratios were off 0.001%. So finicky. The bread itself was okay tasting, pretty strong in flavour which is expected. I cut it very thick then made each of those really thick cuts 4 pieces for sandwiches like a dense german bread.
