I’m getting more and more comfortable with pancakes, or in this case flapjacks. I’m still just dipping my toe in the water of recipes so I went with a more than likely tried and true recipe from Vegan Brunch (reposted here with permission). Every time I make something edible I cheer!
Whether you want to call them pancakes or flapjacks, either is cool by me. They were really easy to make, stayed light and fluffy and I didn’t burn them to a crisp. I topped mine with extra banana and maple syrup.
